Southern Fried Catfish Recipe

Ingredients:

4 catfish fillets
1 cup yellow cornmeal
½ cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon cayenne pepper (optional for heat)
1 cup buttermilk
Vegetable oil, for frying
Lemon wedges, for serving

Instructions:

1. Rinse catfish fillets and pat dry with paper towels.
2. In a shallow bowl, pour the buttermilk.
3. In a separate shallow dish, mix cornmeal, flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper.
4. Dip each fillet in the buttermilk, then dredge thoroughly in the cornmeal mixture, pressing lightly to coat.
5. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
6. Fry catfish fillets in batches for 4–5 minutes per side, or until golden brown and crispy. Avoid overcrowding the pan.
7. Remove fillets and drain on paper towels.
8. Serve hot with lemon wedges and your favorite sides.
