Southern Burned Caramel Cake
Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 cup whole milk
1 tsp vanilla extract
For the Burned Caramel Icing:
1 1/2 cups granulated sugar
1/2 cup water
1/4 cup unsalted butter, softened
1/4 cup heavy cream
1 tsp vanilla extract
Directions:
Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat the softened butter and sugar together until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the flour mixture to the butter mixture, alternating with milk, beginning and ending with the flour mixture. Mix until just combined.
Divide the batter evenly between the prepared pans and smooth the tops.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Make the Burned Caramel Icing:
In a medium saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally but not stirring, until the sugar turns a deep amber color. This should take about 8-10 minutes. Be careful not to let it burn too much, just to the point of caramelization.
Remove from heat and carefully whisk in the butter and cream (it will bubble vigorously). Stir in the vanilla extract.
Allow the caramel to cool for a few minutes before using, but not too long as it will harden as it cools.
Assemble the Cake:
Place one cake layer on a serving platter. Pour a portion of the warm caramel icing over the top of the layer and spread evenly.
Place the second layer on top and pour the remaining icing over the top and sides, spreading quickly before it sets.
Allow the icing to set for a few minutes before slicing and serving.
