Souper Rice
Ingredients:
1 cup long-grain white rice
1 can (10.5 oz) condensed cream of mushroom soup
1 can (10.5 oz) condensed cream of chicken soup
1 cup chicken or vegetable broth
1/2 cup butter, melted
1/2 cup shredded cheddar cheese (optional)
Salt and pepper to taste
1/4 cup chopped fresh parsley (optional, for garnish)
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or similar size casserole dish.
Combine Ingredients:
In a large mixing bowl, combine the rice, cream of mushroom soup, cream of chicken soup, chicken broth, and melted butter. Stir until well blended. Season with salt and pepper to taste.
Pour into Dish:
Pour the rice mixture into the prepared baking dish. Spread it out evenly.
Bake:
Cover the dish tightly with aluminum foil and bake for 45–50 minutes, or until the rice is tender and the liquid is absorbed.
Add Cheese (Optional):
If using cheddar cheese, sprinkle it over the top of the rice during the last 5 minutes of baking. Return to the oven uncovered until the cheese is melted.
Serve:
Remove from the oven and let it rest for 5 minutes before fluffing with a fork. Garnish with fresh parsley, if desired, and serve warm.
