Soft and Fluffy Filipino Pan de Coco
Pan de Coco is a soft, fluffy Filipino bread filled with sweet coconut filling. This recipe gives you a light, pillowy dough with a rich, slightly caramelized coconut filling.
Ingredients:
For the Dough:
4 cups all-purpose flour
2 ¼ tsp (1 packet) instant yeast
½ cup sugar
1 tsp salt
½ cup warm milk (110°F)
¼ cup warm water
1 large egg
¼ cup unsalted butter, softened
½ cup evaporated milk
For the Coconut Filling:
1 ½ cups grated coconut (fresh or desiccated)
½ cup brown sugar
¼ cup condensed milk (optional, for extra creaminess)
2 tbsp butter
½ tsp vanilla extract
¼ tsp salt
For the Egg Wash:
1 egg yolk
2 tbsp evaporated milk
Instructions:
1. Make the Coconut Filling
1. In a pan over medium heat, melt the butter. Add brown sugar and stir until dissolved.
2. Add grated coconut, condensed milk (if using), vanilla extract, and salt. Cook for about 5 minutes, stirring constantly, until thick. Set aside to cool.
2. Make the Dough
1. In a small bowl, combine warm water, warm milk, and 1 tbsp sugar. Sprinkle yeast over it, stir, and let sit for 5–10 minutes until foamy.
2. In a large mixing bowl, combine flour, remaining sugar, and salt.
3. Add yeast mixture, egg, evaporated milk, and softened butter to the dry ingredients. Mix until a dough forms.
4. Transfer to a floured surface and knead for 10–12 minutes until smooth and elastic. If using a stand mixer, knead for about 8 minutes.
3. First Rise
1. Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1–1.5 hours, until doubled in size.
4. Shape the Pan de Coco
1. Punch down the dough and divide it into 12 equal portions.
2. Flatten each piece into a circle and place about 1 tbsp of coconut filling in the center.
3. Gather the edges and seal tightly, then roll into a smooth ball. Place seam-side down on a parchment-lined baking tray.
5. Second Rise
1. Cover the shaped dough and let it rise for 30–45 minutes until puffy.
6. Preheat & Egg Wash
1. Preheat oven to 350°F (175°C).
2. Mix egg yolk and evaporated milk, then brush the tops of the buns.
7. Bake & Serve
1. Bake for 18–22 minutes, or until golden brown.
2. Let cool slightly before serving. Enjoy warm with coffee.
