Snickerdoodle Cobbler
Ingredients:
For the Cobbler:
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1 cup milk
1 teaspoon vanilla extract
1 cup brown sugar, packed
1 tablespoon ground cinnamon
1/4 cup all-purpose flour (for topping)
For the Filling:
3 cups apples, peeled, cored, and sliced
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
Directions:
Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
In a large bowl, whisk together 1 cup flour, 1 cup granulated sugar, baking powder, and salt.
Stir in the melted butter, milk, and vanilla extract until just combined.
Pour the batter into the prepared baking dish.
In a separate bowl, mix together the brown sugar, 1 tablespoon ground cinnamon, and 1/4 cup flour.
Sprinkle the brown sugar mixture evenly over the batter.
Arrange the sliced apples over the top of the sugar mixture.
Bake for 45-50 minutes, or until the cobbler is golden brown and the filling is bubbly.
Allow to cool slightly before serving.
