SMOKY LEMON GARLIC GRILLED OYSTERS

  1. Preheat the grill:
    Preheat your grill to medium-high heat.

  2. Make the butter sauce:
    In a small bowl, mix melted butter, minced garlic, smoked paprika, lemon zest, lemon juice, salt, and black pepper.

  3. Prepare the oysters:
    Place oysters on the grill, shell side down (so you don’t lose the juices).

  4. Top & grill:
    Spoon about 1 teaspoon of the lemon garlic butter mixture over each oyster.
    Close the grill lid and cook for 5–8 minutes, until the oysters are hot, slightly bubbling, and just cooked through (don’t overcook or they get rubbery).

  5. Finish & serve:
    Remove from grill, sprinkle with chopped parsley if using, and serve immediately with extra lemon wedges.
