Smoky Bourbon BBQ Bacon-Wrapped Meatloaf Cupcakes with Mashed Potato Frosting
Ingredients:
1 lb ground beef (80/20 lean-to-fat ratio)
1/2 cup breadcrumbs
1/4 cup ketchup
2 tbsp Worcestershire sauce
1 tbsp smoky bourbon BBQ sauce
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
8 slices of bacon
2 cups mashed potatoes
Instructions:
1. Preheat oven to 375°F and spray a muffin tin with non-stick cooking spray.
2. In a large bowl, mix together the ground beef, breadcrumbs, ketchup, Worcestershire sauce, 1/2 tablespoon of the BBQ sauce, garlic powder, salt, and pepper until well combined.
3. Divide the beef mixture evenly among 8 muffin cups. Press down firmly and create a small depression in the center of each.
4. Brush the remaining BBQ sauce over the tops of each meatloaf cup.
5. Wrap each meatloaf cup with one slice of bacon, tucking the ends underneath to secure.
6. Bake for 25–30 minutes, or until the internal temperature reaches 165°F and the bacon is crispy.
7. While baking, prepare your mashed potatoes and transfer them to a piping bag fitted with a star tip.
8. Let the meatloaf cupcakes rest for 5 minutes before removing them from the muffin tin.
9. Pipe mashed potatoes onto each cupcake in a swirl pattern to mimic frosting.
10. Garnish with chopped herbs if desired and serve warm.
