Smoked Sausage Pasta with Brussels Sprouts & Squash
Ingredients:
2 smoked sausages (such as Andouille or Cajun), sliced
200g pasta (penne or rigatoni)
1 cup Brussels sprouts, halved
1 cup cubed butternut squash
2 tbsp olive oil
1 tsp dried thyme
1 tbsp balsamic vinegar
Salt and pepper, to taste
Directions:
Preheat the oven to 400°F (200°C).
Toss Brussels sprouts and butternut squash with olive oil, thyme, salt, and pepper. Roast on a baking sheet for 20-25 minutes until tender.
Meanwhile, cook pasta according to package instructions and set aside.
In a skillet, cook the sliced sausage over medium heat until browned.
Combine the pasta, roasted veggies, and sausage in a large bowl. Drizzle with balsamic vinegar and toss to combine.
Serve hot and enjoy a comforting autumn-inspired meal!
