Smoked Brisket Grilled Cheese
Ingredients:
2 slices thick-cut sourdough bread (or your favorite bread)
4 oz smoked brisket, thinly sliced or shredded
2 slices cheddar cheese
2 slices provolone or Monterey Jack cheese
2 tbsp butter, softened
1 tbsp BBQ sauce (optional)
1 tbsp Dijon or yellow mustard (optional)
Pickled jalapeños (optional, for extra spice)
Directions:
Prep the Bread:
Spread the softened butter on one side of each slice of bread. This will create that golden, crispy exterior when grilling.
Assemble the Grilled Cheese:
Lay one slice of bread butter-side down on a cutting board or plate.
Place a slice of cheddar cheese on the unbuttered side of the bread.
Add the sliced or shredded smoked brisket on top of the cheese. If you’re using BBQ sauce or mustard, drizzle or spread it on the brisket at this stage.
Add the pickled jalapeños if desired, then layer the provolone or Monterey Jack cheese over the brisket.
Top with the second slice of bread, butter-side facing up.
Grill the Sandwich:
Heat a non-stick skillet or cast-iron pan over medium heat.
Place the sandwich in the pan and cook for about 3-4 minutes per side, pressing down gently with a spatula to ensure even grilling.
Flip the sandwich once the bread is golden and crispy, and the cheese starts to melt. Cook the other side for another 3-4 minutes until both sides are golden and the cheese is fully melted.
Serve:
Remove from the skillet, cut the sandwich in half, and serve immediately. Enjoy your smoked brisket grilled cheese with extra BBQ sauce or a side of coleslaw for added flavor.
