Slow Cooker Tomato Tortellini Soup

Ingredients:
1 (28 oz) can crushed tomatoes
1 (15 oz) can diced tomatoes
4 cups vegetable or chicken broth
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon Italian seasoning
Salt and pepper, to taste
1/2 teaspoon red pepper flakes (optional)
1 (8 oz) package cheese tortellini, fresh or frozen
1 cup heavy cream
1/2 cup grated Parmesan cheese
Fresh basil, chopped (for garnish)

Directions:
Prepare Base: Add crushed tomatoes, diced tomatoes, broth, onion, garlic, Italian seasoning, salt, pepper, and red pepper flakes to the slow cooker. Stir to combine.
Cook on Low: Cover and cook on low for 6-7 hours (or on high for 3-4 hours), until the flavors are well blended and the onion is tender.
Add Tortellini: Stir in the tortellini, heavy cream, and Parmesan cheese. Cover and cook on high for an additional 20-30 minutes, until the tortellini is tender.
Serve: Ladle soup into bowls, garnish with fresh basil, and enjoy hot.
