1 cup sauerkraut, drained and chopped
1 cup Swiss cheese, shredded
1 cup cream cheese, softened
½ cup mayonnaise
¼ cup sour cream
2 tablespoons Thousand Island dressing (or Russian dressing)
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Rye or pumpernickel bread, for serving (optional)

Instructions:
Prepare the Slow Cooker:
Spray the inside of your slow cooker with cooking spray for easy cleanup.
Mix Ingredients:
In a large bowl, combine the corned beef, sauerkraut, Swiss cheese, cream cheese, mayonnaise, sour cream, Thousand Island dressing, garlic powder, and onion powder. Mix well until all ingredients are thoroughly combined.
Season:
Taste the mixture and season with salt and pepper as needed.
Cook:
Pour the mixture into the prepared slow cooker and spread it evenly.
Cover and cook on low for 2-3 hours or on high for 1-1.5 hours, stirring occasionally, until the dip is heated through and the cheese is melted.
Serve:
Once the dip is hot and bubbly, transfer it to a serving bowl. Garnish with fresh parsley if desired.
Serve warm with rye or pumpernickel bread, crackers, or vegetable sticks for dipping.
