Slow Cooker Chicken Tortellini Soup
Ingredients:
1 lb boneless, skinless chicken breasts
1 onion, chopped
3 cloves garlic, minced
3 carrots, sliced
3 celery stalks, chopped
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 teaspoon dried basil
1/2 teaspoon dried oregano
Salt and pepper to taste
2 cups frozen cheese tortellini
2 cups fresh spinach
1/2 cup grated Parmesan cheese
Directions:
Place the chicken breasts in the bottom of the slow cooker. Add the chopped onion, garlic, carrots, and celery.
Pour in the chicken broth and diced tomatoes. Stir in the dried basil, oregano, salt, and pepper.
Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and vegetables are tender.
Remove the chicken breasts from the slow cooker and shred them with two forks. Return the shredded chicken to the slow cooker.
Stir in the frozen tortellini and cook for an additional 30 minutes on high until the tortellini are tender.
Stir in the fresh spinach until wilted, then serve the soup garnished with grated Parmesan cheese.
