Slow Cooker Chicken Bacon Ranch Sandwiches
Ingredients:
4 boneless, skinless chicken breasts
1 packet ranch seasoning mix
8 oz cream cheese, softened
1 cup shredded cheddar cheese
8 slices cooked bacon, crumbled
½ cup chicken broth
6-8 sandwich rolls or buns
Optional: lettuce, tomato slices, ranch dressing, or any desired toppings
Directions:
Prepare the Chicken:
In a slow cooker, place the chicken breasts in an even layer. Sprinkle the ranch seasoning mix evenly over the chicken.
Add Cream Cheese and Broth:
Add the softened cream cheese and chicken broth on top of the chicken. Cover the slow cooker with its lid.
Cook:
Set the slow cooker on Low and cook for 6-7 hours or on High for 3-4 hours, until the chicken is fully cooked and tender.
Shred the Chicken:
Once cooked, use two forks to shred the chicken directly in the slow cooker, mixing it with the melted cream cheese mixture until well-combined.
Add Bacon and Cheese:
Stir in the shredded cheddar cheese and crumbled bacon, mixing until the cheese has melted into the mixture. Let it cook for an additional 5-10 minutes on Low.
Assemble the Sandwiches:
Toast the sandwich rolls if desired. Scoop the chicken mixture onto the buns. Optionally, top with lettuce, tomato, or an extra drizzle of ranch dressing.
Serve:
Serve the sandwiches hot with your favorite sides like chips, fries, or a salad.
