Slow Cooker Cheesy Chicken Penne
Ingredients:
1.5 lbs boneless, skinless chicken breasts
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt and pepper, to taste
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1 cup heavy cream
8 oz cream cheese, softened
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
12 oz penne pasta, uncooked
Fresh parsley for garnish (optional)
Directions:
Prep the Chicken:
Season the chicken breasts with garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.
Layer in Slow Cooker:
Place the seasoned chicken in the bottom of your slow cooker. Pour the cream of chicken soup, chicken broth, and heavy cream over the chicken. Add the softened cream cheese, breaking it into small pieces, over the top.
Cook the Chicken:
Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is fully cooked and tender.
Shred the Chicken:
Once cooked, remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker and stir everything together.
Add Cheeses:
Stir in the shredded cheddar and mozzarella cheeses until melted and well combined with the sauce.
Cook the Pasta:
Cook the penne pasta according to the package instructions until al dente. Drain the pasta, and add it to the slow cooker. Stir to combine, ensuring the pasta is well coated in the cheesy sauce.
Final Touch:
Allow the dish to cook for an additional 10-15 minutes on low to let the flavors blend. Garnish with freshly chopped parsley, if desired, before serving.
