Slow Cooker Cheesy Chicken Broccoli Casserole

Slow Cooker Cheesy Chicken Broccoli Casserole

Ingredients:
1.5 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
3 cups broccoli florets (fresh or frozen)
2 cups shredded cheddar cheese
1 cup uncooked white rice
1 can (10.5 oz) condensed cream of chicken soup
2 cups chicken broth
1 cup milk
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and pepper to taste
2 tbsp butter (optional, for extra creaminess)

Directions:
Prepare the Ingredients:
Cut the chicken into bite-sized pieces, and if using fresh broccoli, wash and chop the florets into smaller pieces.
Assemble in Slow Cooker:
In your slow cooker, combine the chicken, uncooked rice, condensed cream of chicken soup, chicken broth, milk, garlic powder, onion powder, paprika, salt, and pepper. Stir everything to combine.
Cook the Base:
Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and the rice is tender.
Add Broccoli and Cheese:
About 30 minutes before serving, stir in the broccoli florets and 1.5 cups of shredded cheddar cheese. Let it cook for another 30 minutes until the broccoli is tender.
Finish and Serve:
Once done, sprinkle the remaining ½ cup of cheese on top and allow it to melt. If desired, stir in 2 tablespoons of butter for extra creaminess. Serve hot.
