Slow Cooker Cheesy Bacon Ranch Potatoes
Ingredients:
2 lbs baby potatoes (or regular potatoes, diced into bite-sized pieces)
1 packet (1 oz) ranch seasoning mix
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup cream cheese, softened
1/2 cup milk
1/2 cup cooked bacon, crumbled (about 6-8 strips)
1/4 cup green onions, chopped (optional)
Salt and pepper to taste
1/2 cup shredded mozzarella cheese (for topping)
Instructions:
1. Prepare the Potatoes:
Wash and halve or dice the baby potatoes into bite-sized pieces. If using larger potatoes, peel and cut them into cubes.
2. Mix the Ingredients:
In a large bowl, combine the ranch seasoning mix, sour cream, shredded cheddar cheese, cream cheese, and milk. Stir until smooth and creamy.
3. Assemble in the Slow Cooker:
Place the diced potatoes in the bottom of your slow cooker.
Pour the creamy ranch mixture over the potatoes and stir to coat evenly.
4. Cook:
Cover and cook on low for 4-5 hours, or on high for 2-3 hours, until the potatoes are tender.
5. Add Bacon and Cheese:
About 30 minutes before serving, stir in the crumbled bacon and top with shredded mozzarella cheese.
Cover and cook for the remaining time until the cheese is melted and bubbly.
6. Garnish and Serve:
Once the potatoes are cooked and cheesy, garnish with chopped green onions (if using) and additional bacon crumbles.
