Slow Cooker Cheesy Bacon Ranch Potatoes
Ingredients:
2 lbs (900g) baby potatoes, halved or quartered
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup cooked bacon, crumbled
1 packet (1 oz) ranch seasoning mix
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup milk
2 cloves garlic, minced
1/4 cup chopped green onions
Salt and black pepper to taste
Directions:
Prepare Potatoes:
Wash and halve or quarter the baby potatoes. Place them in the slow cooker.
Mix Sauce:
In a medium bowl, combine the sour cream, mayonnaise, ranch seasoning mix, and milk. Stir until smooth. Add the minced garlic and mix well.
Combine and Cook:
Pour the ranch sauce over the potatoes in the slow cooker. Stir to coat the potatoes evenly. Cover and cook on low for 4-5 hours, or until the potatoes are tender.
Add Bacon and Cheese:
About 30 minutes before serving, sprinkle the crumbled bacon over the potatoes. Add the shredded cheddar and mozzarella cheese on top. Cover and continue to cook until the cheese is melted and bubbly.
Garnish and Serve:
Once cooked, sprinkle chopped green onions on top. Serve hot and enjoy!
