Slow Cooker Cashew Chicken

Ingredients:
1 ½ lbs boneless, skinless chicken thighs, cut into bite-sized pieces
1 cup unsalted cashews
1/4 cup low-sodium soy sauce
2 tablespoons hoisin sauce
2 tablespoons rice vinegar
2 tablespoons honey
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
1/2 teaspoon red pepper flakes (optional)
1/4 cup water
2 tablespoons cornstarch (for thickening)
2 green onions, chopped (for garnish)
Sesame seeds (for garnish)

Directions:
In a slow cooker, combine the chicken, soy sauce, hoisin sauce, rice vinegar, honey, garlic, ginger, and red pepper flakes (if using).
Cover and cook on low for 4 hours or on high for 2 hours until the chicken is tender.
About 30 minutes before serving, mix the water and cornstarch in a small bowl until smooth. Stir the mixture into the slow cooker to thicken the sauce.
Add the cashews to the slow cooker and stir to combine. Cook for an additional 30 minutes on low.
Serve the cashew chicken over steamed rice or noodles, garnished with green onions and sesame seeds.
