Slow Cooker Broccoli Cheese Soup
Ingredients:
For the Soup:
4 cups broccoli florets, chopped
1 small onion, finely chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
2 cups shredded cheddar cheese
1 cup heavy cream
1/4 cup all-purpose flour
4 tablespoons unsalted butter
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
Fresh parsley, chopped (optional, for garnish)
Directions:
Prepare the Slow Cooker:
Add the chopped broccoli, onion, and garlic to your crock pot.
Pour in the chicken or vegetable broth.
Cook the Vegetables:
Cover the crock pot and cook on low for 4 hours, or until the broccoli is tender.
Make the Cheese Sauce:
In a medium saucepan, melt the butter over medium heat.
Whisk in the flour and cook for 2-3 minutes to form a roux.
Gradually whisk in the heavy cream, stirring constantly until the mixture thickens.
Remove from heat and slowly add the shredded cheddar cheese, stirring until smooth.
Combine and Cook:
Pour the cheese sauce into the crock pot with the cooked broccoli.
Stir to combine, then season with salt, pepper, and nutmeg (if using).
Cover and cook on low for an additional 30 minutes, allowing the flavors to meld.
Serve:
Ladle the soup into bowls and garnish with fresh parsley if desired.
