Skillet Zucchini and Mushrooms

Ingredients:
2 medium zucchinis, sliced
8 oz mushrooms, sliced (cremini or button)
2 tbsp olive oil
2 cloves garlic, minced
1/2 tsp dried oregano
1/2 tsp dried thyme
Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional)
Fresh parsley, chopped (for garnish)

Directions:
Heat the Skillet: In a large skillet, heat the olive oil over medium heat.
Cook the Mushrooms: Add the sliced mushrooms to the skillet and sauté for 4-5 minutes until they are browned and tender.
Add Zucchini and Garlic: Add the sliced zucchini and minced garlic to the skillet. Cook for an additional 4-5 minutes, stirring occasionally, until the zucchini is tender but still slightly crisp.
Season: Sprinkle the oregano, thyme, salt, and pepper over the vegetables. Stir to combine and cook for another minute to allow the flavors to meld.
Finish with Cheese: If desired, sprinkle the grated Parmesan cheese over the top and let it melt for a minute.
Garnish and Serve: Remove from heat, garnish with chopped parsley, and serve warm as a side dish or light main course.
