Shrimp Tortellini Alfredo Recipe
Ingredients:
1 lb cheese tortellini (fresh or frozen)
1 lb shrimp (peeled, deveined, and tails removed)
2 tablespoons olive oil
3 tablespoons unsalted butter
3 cloves garlic (minced)
1 ½ cups heavy cream
1 cup grated Parmesan cheese
Salt and pepper (to taste)
¼ teaspoon red pepper flakes (optional, for a bit of heat)
2 tablespoons fresh parsley (chopped, for garnish)
Instructions:
Cook the tortellini:
Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions until al dente. Drain and set aside.
Cook the shrimp:
While the tortellini is cooking, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.
Make the Alfredo sauce:
In the same skillet, add butter and minced garlic. Cook for 1-2 minutes until the garlic is fragrant (do not let it brown).
Pour in the heavy cream and bring to a simmer. Cook for 3-5 minutes, stirring frequently, until the sauce begins to thicken slightly.
Stir in the Parmesan cheese, and continue to cook until the cheese is melted and the sauce is smooth. Season with salt, pepper, and red pepper flakes (if using).
Combine the ingredients:
Add the cooked tortellini and shrimp back into the skillet, tossing gently to coat with the Alfredo sauce.
Garnish and serve:
Sprinkle with chopped parsley and serve immediately.
