Shrimp Tortellini Alfredo

Ingredients:
1 lb cheese tortellini (fresh or frozen)
1 lb shrimp, peeled and deveined
2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
1 tablespoon butter
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish (optional)

Instructions:
1. Cook the Tortellini:
Bring a large pot of salted water to a boil. Cook tortellini according to the package instructions. Drain and set aside.
2. Cook the Shrimp:
While the tortellini cooks, heat olive oil in a large skillet over medium heat.
Add shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp from the skillet and set aside.
3. Prepare the Alfredo Sauce:
In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Add heavy cream and bring to a simmer. Let it cook for 2-3 minutes until slightly thickened.
Stir in Parmesan cheese, Italian seasoning, salt, and pepper, and continue cooking for another 1-2 minutes until smooth.
4. Combine:
Add the cooked tortellini to the skillet and toss to coat in the Alfredo sauce. Add the cooked shrimp and gently mix everything together.
5. Serve:
Garnish with fresh parsley, if desired, and serve immediately.
