For the Shrimp Filling:

👩🍳 Directions (7 Steps)
1. Prep the Shrimp & Vegetables
Pat the shrimp dry and season lightly with salt and pepper. Dice the onion, slice the bell pepper, and mince the garlic for quick cooking.
2. Sauté the Onions and Peppers
Heat 2 tbsp oil in a large skillet over medium-high. Add onions and peppers and cook for 4–5 minutes until softened and lightly charred at the edges.
3. Add Garlic & Seasonings
Stir in the minced garlic, chili powder, paprika, and cumin. Cook for 30 seconds until fragrant.
4. Cook the Shrimp
Add the shrimp to the pan and cook for 2–3 minutes per side, until pink and cooked through. Squeeze in fresh lime juice. Remove mixture from skillet and set aside.
5. Assemble the Quesadilla
Lower heat to medium. Add a little butter or oil to the skillet. Place a tortilla down, sprinkle with cheese, add shrimp mixture, then top with more cheese. Fold tortilla in half.
6. Toast Until Golden
