Ingredients

1 lb baby potatoes, cut into 1½-inch cubes

2 ears corn on the cob, cleaned and cut into 5–6 rounds each

1 lb raw shrimp, thawed, peeled, and deveined

12 oz Andouille smoked sausage, cut into 2-inch pieces

1 small yellow onion, thinly sliced

4 cloves garlic, minced
Seasoning & Butter Mixture

4 tbsp melted butter
-
2 tbsp olive oil
-
1½ tsp Old Bay seasoning

1 tsp smoked paprika
-
½ tsp garlic powder

Salt and black pepper, to taste

Optional: pinch of red pepper flakes or Cajun seasoning
Directions
1️⃣ Pre-Cook the Potatoes (Important Step)
Bring a pot of salted water to a boil. Add potatoes and cook 8–10 minutes, just until slightly tender. Drain well.
(This ensures everything finishes cooking evenly.)
2️⃣ Prep the Foil
Preheat grill to 400°F (200°C) or oven to 425°F (220°C).
Tear out 4 large sheets of heavy-duty foil.
3️⃣ Assemble the Packets
Divide potatoes, corn, shrimp, sausage, onion, and garlic evenly among foil sheets.
In a small bowl, whisk together melted butter, olive oil, Old Bay, paprika, garlic powder, salt, and pepper. Drizzle evenly over each packet and gently toss.
4️⃣ Seal & Cook
Fold foil tightly into sealed packets.

Shrimp should be pink and opaque, potatoes tender, and sausage sizzling.
