Shrimp and Peanut Butter Noodles Recipe

Ingredients:
8 oz (225 g) rice noodles or spaghetti
1 lb (450 g) shrimp, peeled and deveined
2 tbsp vegetable oil
2 cloves garlic, minced
1 red bell pepper, thinly sliced
1 carrot, julienned
1/4 cup green onions, chopped
1/4 cup cilantro, chopped (optional)
Sesame seeds for garnish (optional)
Peanut Butter Sauce:
1/3 cup creamy peanut butter
1/4 cup soy sauce
2 tbsp lime juice
1 tbsp honey or maple syrup
1 tbsp rice vinegar
1-2 tsp sriracha or chili sauce (to taste)
1/4 cup warm water (to thin the sauce)

Instructions:
Cook Noodles: Cook the rice noodles or spaghetti according to the package instructions. Drain and set aside.
Prepare Sauce: In a bowl, whisk together the peanut butter, soy sauce, lime juice, honey or maple syrup, rice vinegar, sriracha or chili sauce, and warm water until smooth. Adjust the consistency with more water if needed.
Cook Shrimp: Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
Sauté Vegetables: In the same skillet, add the remaining 1 tbsp of oil. Add the garlic, red bell pepper, and carrot. Sauté until the vegetables are tender, about 5 minutes.
Combine Ingredients: Add the cooked noodles, shrimp, and peanut butter sauce to the skillet with the vegetables. Toss everything together until well combined and heated through.
Serve: Divide the noodles into bowls. Garnish with green onions, cilantro, and sesame seeds if desired.
