Shrimp and Gnocchi with Garlic Parmesan Cream

Shrimp and Gnocchi with Garlic Parmesan Cream

Ingredients:
For the Shrimp and Gnocchi:
1 lb shrimp, peeled and deveined
1 lb potato gnocchi (store-bought or homemade)
1 tbsp olive oil
1 tbsp butter
Salt and pepper, to taste
1 tsp dried basil (optional)
1 tsp dried oregano (optional)
Fresh parsley, chopped (for garnish)
For the Garlic Parmesan Cream Sauce:
2 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chicken broth (or vegetable broth)
1/2 tsp garlic powder
Salt and pepper, to taste
1/4 tsp crushed red pepper flakes (optional, for heat)

Instructions:
Cook the Gnocchi:
Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions (usually about 2-3 minutes or until they float to the surface).
Drain the gnocchi, reserving about 1/2 cup of the pasta water. Set the gnocchi aside.
Cook the Shrimp:
In a large skillet, heat 1 tbsp olive oil and 1 tbsp butter over medium-high heat.
Season the shrimp with salt, pepper, basil, and oregano (if using). Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
Make the Garlic Parmesan Cream Sauce:
In the same skillet, melt 2 tbsp butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
Pour in the heavy cream, chicken broth, and garlic powder. Stir to combine and let the sauce simmer for 3-4 minutes, allowing it to thicken slightly.
Stir in the grated Parmesan cheese and cook for another 2-3 minutes, until the sauce becomes creamy and smooth. If the sauce is too thick, you can add a little of the reserved pasta water to reach your desired consistency.
Combine the Shrimp, Gnocchi, and Sauce:
Add the cooked gnocchi to the skillet with the garlic Parmesan cream sauce. Gently toss to coat the gnocchi in the sauce.
Return the cooked shrimp to the skillet and toss everything together until the shrimp and gnocchi are well coated in the creamy sauce. Heat for an additional 2-3 minutes, until everything is warmed through.
Serve:
Garnish with fresh parsley and serve immediately.
