Ingredients

For the Bowls

  • 1 lb (450 g) large shrimp, peeled and deveined

  • 1–2 ripe avocados, sliced

  • 1 large ripe mango, diced

  • 2 cups cooked rice or quinoa

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)

For the Mango Salsa

  • 1 large ripe mango, diced

  • ½ red bell pepper, diced

  • ¼ red onion, finely chopped

  • 1 Tbsp fresh lime juice

  • 1 tsp honey or maple syrup (optional)

  • Salt, to taste

For the Lime-Chili Sauce

  • 2 Tbsp olive oil

  • 1 Tbsp lime juice

  • 1 tsp honey

  • ½ tsp chili flakes or sriracha

  • Salt and pepper, to taste


Directions

  1. Prepare the Mango Salsa
    In a bowl, combine diced mango, red bell pepper, red onion, lime juice, and honey. Season with a pinch of salt. Set aside to let flavors meld.

  2. Cook the Shrimp
    Heat a skillet over medium heat with 1 tsp olive oil. Season shrimp with salt and pepper. Cook 2–3 minutes per side until pink and opaque. Remove from heat.

  3. Make the Lime-Chili Sauce
    Whisk together olive oil, lime juice, honey, chili flakes, salt, and pepper. Adjust heat to taste.

  4. Assemble the Bowls
    Divide cooked rice or quinoa between bowls. Top with sliced avocado, cooked shrimp, and a generous spoonful of mango salsa. Drizzle with lime-chili sauce.

  5. Garnish & Serve
    Sprinkle with chopped cilantro and serve with lime wedges on the side.
