Ingredients
For the Pudding:
1¼ cups (185g) all-purpose flour
2½ tsp baking powder
¼ cup (50g) dark brown sugar (for deeper butterscotch flavor)
7 tbsp (100g) unsalted butter, melted
1 large egg
½ cup (125ml) milk
4 tbsp golden syrup (or substitute with dark corn syrup, honey, or maple syrup)
For the Butterscotch Sauce:
¾ cup (150g) dark brown sugar
2 tbsp cornstarch (corn flour)
2 cups (500ml) boiling water
For Serving:
Vanilla ice cream (highly recommended!)
Step-by-Step Instructions
1. Preheat & Prepare the Dish
Preheat your oven to 350°F (180°C). Grease a 6-cup (1.6 quart) baking dish or individual ramekins lightly with butter.

2. Mix the Pudding Batter
In a large mixing bowl, whisk together the flour, baking powder, and dark brown sugar.

Add the melted butter, egg, milk, and golden syrup. Whisk until mostly smooth—some small lumps are okay.

3. Pour the Batter Into the Dish
Carefully pour the batter into the prepared baking dish. Smooth the surface with a spatula.

4. Prepare the Sauce Mixture
In a separate bowl, whisk together the dark brown sugar and cornstarch until well combined.

5. Sprinkle & Pour Water
Sprinkle the sugar-cornstarch mixture evenly over the surface of the batter.

Using a spoon to control the flow, gently pour the boiling water over the top. The water will settle beneath the batter during baking and transform into the rich sauce.

6. Bake Until Set
Place the dish in the preheated oven and bake for about 40 minutes or until a toothpick inserted into the cake portion comes out clean.

7. Serve Warm with Sauce
Let the pudding cool slightly before serving. Spoon portions into bowls and generously drizzle with the warm butterscotch sauce from the bottom of the dish.

Top with a scoop of vanilla ice cream and enjoy immediately!
