Savory Mexican Cornbread
Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup vegetable oil
2 large eggs
1 cup shredded cheddar cheese
1 cup canned corn kernels, drained
1/2 cup diced jalapeños (fresh or pickled)
1/2 cup diced red bell pepper
1/4 cup chopped fresh cilantro (optional)
Directions:
Preheat the oven to 400°F (200°C). Grease a 9-inch square baking dish or a similar-sized oven-safe dish.
In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
In another bowl, combine milk, vegetable oil, and eggs. Add the wet ingredients to the dry ingredients and mix until just combined.
Fold in cheddar cheese, corn kernels, jalapeños, red bell pepper, and cilantro (if using).
Pour the batter into the prepared baking dish and spread it evenly.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
Allow to cool slightly before cutting into squares and serving.
