Sausage Scramble Breakfast Burritos

Ingredients:
1 lb breakfast sausage (pork or turkey)
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup salsa (optional)
1 small onion, diced
1 small bell pepper, diced
1 tablespoon olive oil
4 large flour tortillas
1/4 cup sour cream (optional)
Hot sauce (optional)

Directions:
Cook the Sausage:
In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, about 6-8 minutes. Break it into crumbles as it cooks. Once done, remove from the skillet and set aside.
Sauté the Vegetables:
In the same skillet, add the olive oil, diced onion, and bell pepper. Cook until soft and slightly caramelized, about 5 minutes. Set aside with the sausage.
Scramble the Eggs:
In a medium bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture into the skillet and cook on medium heat, stirring gently until the eggs are fully scrambled and fluffy, about 3-4 minutes.
Assemble the Filling:
Return the cooked sausage and vegetables to the skillet with the scrambled eggs. Stir to combine. Add the shredded cheese and allow it to melt into the egg mixture. Remove from heat.
Warm the Tortillas:
Heat the flour tortillas in a dry skillet or in the microwave for about 20 seconds to make them pliable.
Assemble the Burritos:
Spoon the egg, sausage, and cheese mixture into the center of each tortilla. If desired, add salsa, sour cream, and hot sauce on top of the filling. Fold the sides of the tortilla over the filling, then roll up from the bottom to form a burrito.
Serve:
Serve the burritos warm. You can wrap them in foil to keep them warm or enjoy immediately.
