Ingredients:
1 lb sausage
2 cups milk
1/4 cup all-purpose flour
8 biscuits (pre-made or homemade)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground sage
Optional: 1/2 teaspoon crushed red pepper flakes (for a spicy kick)

Directions:
Cook the Sausage:
In a large skillet over medium heat, cook the sausage until browned.
As it cooks, break the sausage into smaller pieces using a spatula.
Prepare the Gravy:
Sprinkle the flour over the cooked sausage and stir it in.
Let the mixture cook for about 2 minutes to get rid of the raw flour taste.
Gradually add the milk while stirring constantly.
Turn the heat up to medium-high, allowing the mixture to come to a boil.
Reduce the heat and let it simmer until the gravy thickens, about 5 minutes.
Season with salt, pepper, and sage (and crushed red pepper flakes if desired).
Preheat the Oven:
Set your oven to 375°F (190°C).
Assemble the Casserole:
Arrange the biscuits in a single layer in a 9×13 inch baking dish.
Pour the sausage gravy over the biscuits, ensuring they are well-covered.
Bake:
Place the dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown on top.
