Sausage, Egg & Cheese Breakfast Roll-Ups
Savory, cheesy, and totally portable — your go-to morning meal!
Ingredients:
1 lb breakfast sausage
6 large eggs
½ cup shredded cheddar cheese
¼ cup milk
½ tsp salt
¼ tsp black pepper
4 large flour tortillas
Instructions:
1. Cook the Sausage:
In a skillet over medium heat, cook the sausage until browned and fully cooked. Drain excess grease and set aside.
2. Make the Scrambled Eggs:
In a bowl, whisk eggs with milk, salt, and pepper. Pour into a non-stick pan and scramble over medium-low heat until fluffy and cooked through.
3. Assemble the Roll-Ups:
Warm tortillas slightly (to prevent tearing). Layer each tortilla with a portion of sausage, scrambled eggs, and cheddar cheese.
4. Roll ‘Em Up:
Roll tightly like a burrito, tucking in the ends.
5. Optional – Crisp ‘Em Up:
For extra texture, lightly toast roll-ups in a skillet or panini press for 1–2 minutes per side until golden and crispy.
Make-Ahead Tip:
Wrap each roll-up in foil or parchment, then freeze. Microwave for 1–2 minutes when ready to enjoy!

Swap sausage with turkey or veggie crumbles for a lighter version.
