Samoa Truffles

Ingredients:
1½ cups crushed shortbread cookies (you can use store-bought or homemade)
1 cup shredded sweetened coconut, toasted
1 cup caramel sauce (store-bought or homemade)
½ teaspoon vanilla extract
8 oz semi-sweet chocolate chips (or dark chocolate, if preferred)
½ tablespoon coconut oil (optional, for smoother chocolate coating)
Extra toasted coconut (for topping, optional)

Instructions:
Step 1: Toast the Coconut
Preheat your oven to 350°F (175°C).
Spread the shredded coconut on a baking sheet and toast for 5-7 minutes, stirring occasionally, until golden brown. Watch closely to prevent burning.
Remove from the oven and let it cool completely.
Step 2: Make the Truffle Mixture
In a medium bowl, combine the crushed shortbread cookies, toasted coconut, and caramel sauce. Add vanilla extract and mix until well combined.
The mixture should be sticky enough to hold its shape when pressed together. If it’s too dry, add a little more caramel sauce.
Step 3: Shape the Truffles
Using a spoon or a small cookie scoop, scoop out about 1 tablespoon of the mixture and roll it into a ball with your hands.
Place the truffles on a parchment-lined baking sheet.
Once all the truffles are shaped, chill them in the refrigerator for about 30 minutes to firm up.
Step 4: Melt the Chocolate
In a microwave-safe bowl, melt the chocolate chips with the coconut oil (if using) in 30-second intervals, stirring in between, until smooth and completely melted.
Step 5: Coat the Truffles
Remove the chilled truffles from the refrigerator.
Using a fork or toothpick, dip each truffle into the melted chocolate, ensuring it’s fully coated. Let any excess chocolate drip off.
Place the chocolate-coated truffles back on the parchment-lined baking sheet.
Step 6: Garnish and Chill
While the chocolate is still wet, sprinkle some extra toasted coconut on top of each truffle for garnish (optional).
Once all the truffles are coated and garnished, place them back in the refrigerator for about 15-20 minutes to set.
Step 7: Serve
After the chocolate has set, your Samoa Truffles are ready to enjoy!
Store the truffles in an airtight container in the refrigerator for up to a week.
