Ruth’s Chris Sweet Potato Casserole

Ingredients
Sweet Potato Layer:
3 cups mashed sweet potatoes (about 4-5 medium sweet potatoes)
1/2 cup granulated sugar
1/3 cup unsalted butter, melted
1/2 cup whole milk
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
Pecan Streusel Topping:
1/2 cup brown sugar, packed
1/3 cup all-purpose flour
1/3 cup unsalted butter, melted
1 cup chopped pecans
Instructions
1. Prepare the Sweet Potatoes
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a similar casserole dish.
If not already mashed, peel and boil the sweet potatoes until tender, then mash them until smooth.
2. Make the Sweet Potato Mixture
In a large mixing bowl, combine the mashed sweet potatoes, sugar, melted butter, milk, eggs, vanilla, and salt. Mix until smooth and creamy.
Pour the sweet potato mixture into the prepared baking dish and spread it evenly.
3. Prepare the Pecan Streusel
In a medium bowl, mix together the brown sugar, flour, melted butter, and chopped pecans until crumbly.
Sprinkle the pecan streusel evenly over the sweet potato mixture.
4. Bake
Bake for 30-35 minutes, or until the topping is golden and the casserole is heated through.
