This Spinach Rockefeller Dip is rich, warm, and ultra-creamy, inspired by the iconic steakhouse favorite. Loaded with spinach, cheese, and a hint of garlic, it’s perfect for parties, game day, or any time you want a dangerously addictive appetizer.


Ingredients

  • 1 Tbsp butter

  • 1 Tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup chopped spinach (fresh or thawed frozen, squeezed dry)

  • ½ cup artichoke hearts, chopped (optional)

  • ½ cup cream cheese, softened

  • ½ cup sour cream

  • ½ cup mayonnaise

  • ½ cup grated Parmesan cheese

  • ½ cup shredded mozzarella cheese

  • Salt and black pepper, to taste

  • ½ tsp red pepper flakes (optional, for heat)

  • ¼ tsp nutmeg (optional, for extra depth)

Optional Garnish:

  • Extra Parmesan or mozzarella cheese

  • Chopped parsley

  • Toasted baguette slices or crackers for serving


Directions

  1. Preheat Oven
    Preheat oven to 375°F (190°C). Grease a small baking dish or oven-safe skillet.

  2. Sauté Aromatics
    In a skillet over medium heat, melt butter with olive oil. Add onion and cook until softened, about 3–4 minutes. Add garlic and cook 30 seconds until fragrant.

  3. Add Spinach & Artichokes
    Stir in chopped spinach and artichoke hearts (if using). Cook until spinach is wilted and excess moisture is evaporated.

  4. Mix in Creamy Ingredients
    Remove from heat and stir in cream cheese, sour cream, mayonnaise, Parmesan, mozzarella, salt, pepper, red pepper flakes, and nutmeg until smooth and well combined.

  5. Bake the Dip
    Transfer mixture to prepared baking dish. Sprinkle extra cheese on top if desired. Bake 15–20 minutes until hot and bubbly, and the top is lightly golden.

  6. Serve
    Serve warm with toasted baguette slices, crackers, or fresh vegetables for dipping.
