Ruth’s Chris Shrimp Scampi is all about tender, flavorful shrimp in a buttery, garlicky sauce with just the right amount of acidity from lemon and white wine. Quick to make, but restaurant-worthy.

1½ pounds large shrimp, peeled and deveined

3 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

½ teaspoon crushed red pepper flakes (optional)

½ cup dry white wine

2 tablespoons fresh lemon juice

1 teaspoon lemon zest
-
2 tablespoons chopped fresh parsley

Salt and black pepper, to taste

Cooked pasta or crusty bread, for serving

👩🍳 Instructions
1️⃣ Prepare the Shrimp
Pat shrimp dry and season lightly with salt and black pepper.
2️⃣ Sauté Garlic & Shrimp
Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
Add garlic and red pepper flakes, sauté 30 seconds until fragrant.
Add shrimp in a single layer and cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.
3️⃣ Make the Pan Sauce
In the same skillet, add white wine and lemon juice.
Simmer 2–3 minutes, scraping up any browned bits.
Stir in remaining butter and lemon zest until melted and smooth. Adjust seasoning with salt and pepper.
