Ruth’s Chris Lobster Mac & Cheese with Three Cheeses

Ingredients

12 oz elbow macaroni or cavatappi pasta

2 cups cooked lobster meat, chopped (tails & knuckles)

3 Tbsp butter
-
3 Tbsp all-purpose flour

2 cups heavy cream
-
1 cup whole milk

1 cup shredded sharp cheddar cheese

½ cup shredded Gruyère cheese

½ cup shredded Parmesan cheese

½ tsp paprika
-
Salt and black pepper, to taste

½ cup panko breadcrumbs (optional, for topping)

1 Tbsp butter, melted (for breadcrumbs, optional)
Directions

Cook the Pasta
Boil pasta in salted water according to package instructions until al dente. Drain and set aside. -
Make the Cheese Sauce
In a large saucepan, melt 3 Tbsp butter over medium heat. Stir in flour and cook 1–2 minutes to form a roux. Slowly whisk in heavy cream and milk, cooking until slightly thickened, about 3–5 minutes. -
Add the Cheeses
Reduce heat to low and stir in cheddar, Gruyère, and Parmesan until melted and smooth. Season with paprika, salt, and black pepper. -
Add Lobster and Pasta
Gently fold in cooked lobster and pasta until fully coated in the cheese sauce. -
Optional Baking for Topping
Preheat oven to 375°F (190°C). Transfer mac & cheese to a greased baking dish. Mix panko breadcrumbs with melted butter and sprinkle on top. Bake 10–15 minutes until golden and bubbly. -
Serve
Plate immediately, garnished with extra Parmesan or chopped parsley if desired.
