Roasted Veggie Delight

Ingredients:
2 cups broccoli florets
2 cups cauliflower florets
1 red bell pepper, chopped
1 zucchini, sliced
1 cup cherry tomatoes
3 tablespoons olive oil
2 teaspoons garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions:
Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
Prepare the Vegetables: In a large bowl, combine the broccoli, cauliflower, bell pepper, zucchini, and cherry tomatoes.
Season the Veggies: Drizzle the olive oil over the vegetables. Sprinkle the garlic powder, oregano, thyme, salt, and pepper. Toss everything together until the veggies are evenly coated.
Roast the Vegetables: Spread the vegetables in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are tender and slightly browned, stirring halfway through.
Serve: Remove from the oven and garnish with fresh parsley before serving. Enjoy as a side dish or toss with pasta for a delightful main course.
