Roasted Veggie Delight

Ingredients:
2 cups broccoli florets
1 zucchini, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, cut into wedges
2 carrots, peeled and sliced
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp paprika
Salt and pepper, to taste
Fresh parsley (for garnish)

Directions:
Preheat Oven:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
Prepare the Vegetables:
Wash and cut all your vegetables into bite-sized pieces. Place the broccoli, zucchini, bell peppers, red onion, and carrots in a large mixing bowl.
Season the Veggies:
Drizzle the olive oil over the vegetables, then add garlic powder, oregano, paprika, salt, and pepper. Toss everything together until all the vegetables are evenly coated.
Roast the Vegetables:
Spread the seasoned vegetables out in an even layer on the prepared baking sheet. Make sure they are not too crowded to ensure even roasting. Roast in the preheated oven for 20-25 minutes, or until the veggies are tender and slightly crispy on the edges.
Garnish and Serve:
Remove from the oven and transfer to a serving platter. Garnish with fresh parsley and enjoy as a side dish or a light meal!
