Roasted Sweet Potatoes
Ingredients:
4 medium sweet potatoes, peeled and cut into 1-inch cubes
2 tablespoons olive oil
1 teaspoon ground paprika
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
Optional: 1 tablespoon fresh chopped parsley for garnish
Directions:
Preheat Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare Sweet Potatoes:
Peel the sweet potatoes and cut them into 1-inch cubes. Try to keep the pieces as uniform as possible for even roasting.
Season:
In a large bowl, toss the sweet potato cubes with olive oil, paprika, cumin, garlic powder, onion powder, thyme, salt, and pepper. Ensure all the pieces are evenly coated.
Roast:
Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Avoid overcrowding the pan to allow for even roasting.
Bake:
Roast in the preheated oven for 25-30 minutes, turning once halfway through the cooking time. The sweet potatoes should be tender and lightly caramelized with crispy edges.
Serve:
Remove from the oven and let cool slightly. Garnish with fresh chopped parsley if desired before serving.
