Roasted Garlic White Chicken Pizza

Ingredients:
1 pizza dough (store-bought or homemade)
1 head of garlic
2 tbsp olive oil
1/2 cup ricotta cheese
1/2 cup grated mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup cooked chicken breast (shredded or cubed)
1/4 cup baby spinach (optional)
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp crushed red pepper flakes (optional, for heat)
Salt and pepper to taste
Fresh parsley (for garnish)

Directions:
Roast the Garlic:
Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap it in aluminum foil, and roast for 30-35 minutes, or until the garlic is soft and fragrant. Once roasted, let it cool, then squeeze the garlic cloves out of their skins and mash them into a paste.
Preheat the Oven:
If using a pizza stone, place it in the oven and preheat to 475°F (245°C). If you don’t have a pizza stone, just preheat the oven to 475°F.
Prepare the White Sauce:
In a small bowl, mix the mashed roasted garlic with ricotta cheese, 1 tablespoon of olive oil, and a pinch of salt and pepper. Set aside.
Roll Out the Pizza Dough:
On a lightly floured surface, roll out the pizza dough to your desired thickness. Transfer the dough to a piece of parchment paper if using a pizza stone or a baking sheet if not.
Assemble the Pizza:
Spread the roasted garlic ricotta mixture evenly over the pizza dough, leaving a small border around the edges for the crust.
Sprinkle the mozzarella and Parmesan cheese over the ricotta mixture.
Add the cooked chicken and baby spinach (if using).
Season with oregano, basil, crushed red pepper flakes (optional), salt, and pepper.
Bake the Pizza:
Transfer the pizza to the preheated oven (or carefully slide it onto the pizza stone). Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
Garnish and Serve:
Remove the pizza from the oven, sprinkle with fresh parsley, slice, and serve hot.
