Roasted Asparagus with Blue Cheese, Bacon, and a Crunch
Ingredients:
1 lb asparagus, trimmed
2 tbsp olive oil
Salt and pepper to taste
4 slices bacon, cooked and crumbled
1/4 cup blue cheese, crumbled
1 tbsp balsamic glaze (optional)
Directions:
Preheat the oven to 400°F (200°C). Place the asparagus on a baking sheet and drizzle with olive oil. Season with salt and pepper.
Roast the asparagus for 15-20 minutes, turning halfway, until tender and slightly caramelized.
While the asparagus is roasting, cook the bacon until crispy. Drain on paper towels and crumble into small pieces.
Once the asparagus is done, transfer it to a serving platter. Sprinkle the crumbled bacon and blue cheese over the top.
Drizzle with balsamic glaze for a touch of sweetness (optional).
Serve immediately as a perfect side dish with grilled meats or your favorite main course
