Red, White, and Blue Cheesecake Salad
Ingredients:
8 oz cream cheese, softened
½ cup powdered sugar
1 cup vanilla yogurt
1 tsp vanilla extract
8 oz whipped topping (like Cool Whip), thawed
2 cups strawberries, hulled and sliced
2 cups blueberries
2 cups mini marshmallows
1 cup raspberries (optional)
Directions:
Prepare Cream Cheese Base: In a large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar, and continue beating until well combined and creamy.
Add Yogurt and Vanilla: Add the vanilla yogurt and vanilla extract to the cream cheese mixture, and mix until smooth.
Fold in Whipped Topping: Gently fold in the thawed whipped topping until the mixture is smooth and fluffy.
Assemble the Salad: Add the strawberries, blueberries, and raspberries (if using) to the bowl with the cream cheese mixture. Gently fold in the fruit to coat it evenly in the cheesecake mixture.
Add Marshmallows: Fold in the mini marshmallows for added sweetness and texture.
Chill and Serve: Cover the salad and refrigerate for at least 1 hour before serving, allowing the flavors to blend. Serve cold.
