Potato Puffs

Ingredients:
2 cups mashed potatoes (leftover or freshly made)
1/2 cup grated cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup all-purpose flour
1/4 cup chopped green onions (optional)
1 large egg, beaten
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt (adjust to taste)
Vegetable oil for frying (or use an air fryer)

Directions:
Prepare the Potato Mixture:
In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, flour, green onions (if using), beaten egg, garlic powder, onion powder, black pepper, and salt. Mix until all ingredients are well combined.
Shape the Puffs:
Using your hands, shape the potato mixture into small balls or puffs, about the size of a golf ball. Place them on a baking sheet lined with parchment paper.
Fry the Puffs:
In a deep frying pan, heat about 1 inch of vegetable oil over medium-high heat until hot. To test, drop a small piece of the potato mixture into the oil; it should sizzle immediately.
Carefully add the potato puffs to the hot oil in batches, making sure not to overcrowd the pan. Fry each puff for 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the puffs from the oil and place them on a paper towel-lined plate to drain excess oil.
Alternatively: Preheat an air fryer to 375°F (190°C) and cook the puffs for 10-12 minutes, turning halfway through, until golden and crispy.
Serve:
Serve the potato puffs hot with your favorite dipping sauce, such as sour cream, ketchup, or aioli. Garnish with additional chopped green onions if desired.
