Ingredients:
4 medium potatoes, peeled and grated
1 small onion, finely grated
2 large eggs, beaten
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder (optional)
Vegetable oil for frying
Sour cream or applesauce for serving (optional)
Directions:
Prepare the Potatoes:
Grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the pancakes are crispy.
Transfer the grated potatoes to a large mixing bowl.
Mix the Ingredients:
Add the grated onion, beaten eggs, flour, baking powder, salt, pepper, and garlic powder (if using) to the potatoes. Mix well until all ingredients are thoroughly combined.
Form the Pancakes:
Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
Using a spoon or your hands, form the potato mixture into small patties or pancakes, about 3 inches in diameter.
Fry the Pancakes:
Carefully place the pancakes in the hot oil, making sure not to overcrowd the skillet. Fry for 3-4 minutes on each side, or until golden brown and crispy.
Once cooked, remove the pancakes from the skillet and place them on a paper towel-lined plate to drain excess oil.
Serve:
Serve the potato pancakes hot, with a dollop of sour cream or applesauce on the side, if desired.
