Pollo a la Mostaza

Ingredients:
4 boneless, skinless chicken breasts
1/2 cup Dijon mustard
1/4 cup whole grain mustard
1/4 cup heavy cream
2 tablespoons olive oil
1/2 cup chicken broth
1 tablespoon honey
3 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions:
1. Season the chicken breasts with salt and pepper on both sides.
2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Remove chicken from skillet and set aside.
3. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
4. Add the Dijon mustard, whole grain mustard, heavy cream, chicken broth, honey, and dried thyme to the skillet. Stir well to combine.
5. Bring the mixture to a simmer, then reduce the heat to low and return the chicken breasts to the skillet. Cover and cook for about 15 minutes, or until the chicken is cooked through and the sauce has thickened.
6. Serve the chicken topped with the mustard sauce and garnish with fresh parsley.
