Description
Pizza night meets comfort-food cravings in these Pizza Enchiladas. Seasoned beef, melty cheese, and classic pizza flavors are rolled into soft tortillas, smothered in sauce, and baked until bubbly and irresistible. They’re fun, filling, and guaranteed to disappear fast.
Ingredients
For the Filling:

1 lb lean ground beef

1 cup diced yellow onion

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon salt
-
½ teaspoon black pepper
-
½ teaspoon paprika
-
1 cup pepperoni slices (halved)

1½ cups shredded mozzarella cheese
For Assembly:

8 large flour tortillas

1½ cups pizza sauce or marinara
-
1 cup shredded mozzarella or Italian blend cheese

2 tablespoons grated Parmesan

Crushed red pepper flakes
Directions
1️⃣ Cook the Beef
In a large skillet over medium heat, cook ground beef and onion until beef is browned and onions are soft. Drain excess grease. Add garlic, Italian seasoning, salt, pepper, and paprika. Stir and cook 1 minute until fragrant.
2️⃣ Add Pizza Flavor
Stir in pepperoni and remove from heat. Fold in 1½ cups mozzarella cheese until melted and combined.
3️⃣ Assemble the Enchiladas
Preheat oven to 375°F (190°C).
Spread ½ cup pizza sauce in the bottom of a greased baking dish.
Spoon beef mixture into tortillas, roll tightly, and place seam-side down in the dish.
4️⃣ Sauce & Cheese
Pour remaining pizza sauce over tortillas. Sprinkle with mozzarella and Parmesan.
5️⃣ Bake
Bake uncovered for 20–25 minutes, until bubbly and lightly golden.
6️⃣ Serve
Let rest 5 minutes before serving. Add your favorite pizza toppings or a sprinkle of fresh basil if desired.
