Pistachio Fudge

Ingredients:
2 cups white chocolate chips
1 (14 oz) can sweetened condensed milk
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 teaspoon salt
1 cup shelled pistachios, roughly chopped
Green food coloring (optional)

Directions:
Prepare the Pan:
Line an 8×8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.
Melt the Chocolate:
In a medium saucepan, combine the white chocolate chips and sweetened condensed milk over low heat. Stir continuously until the chocolate is completely melted and smooth.
Add Flavorings:
Remove the saucepan from the heat. Stir in the vanilla extract, almond extract, and salt. If using, add a few drops of green food coloring and stir until evenly distributed.
Incorporate Pistachios:
Fold in the chopped pistachios, reserving a small handful to sprinkle on top.
Pour the Mixture:
Pour the fudge mixture into the prepared baking dish, spreading it evenly with a spatula. Sprinkle the reserved pistachios on top, gently pressing them into the surface.
Chill the Fudge:
Place the baking dish in the refrigerator and let the fudge set for at least 2 hours, or until firm.
Cut and Serve:
Once set, lift the fudge out of the pan using the parchment paper overhang. Cut into small squares or rectangles and serve.
Storage:
Store any leftover fudge in an airtight container in the refrigerator for up to 2 weeks.
