Pineapple Rum Fritters
Ingredients:
1 cup fresh pineapple, diced (or canned, drained)
1/4 cup dark rum (optional)
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup milk
1 large egg
1 teaspoon vanilla extract
Oil for frying (vegetable or canola oil)
Powdered sugar (for dusting)
Directions:
Prepare the Pineapple:
If using fresh pineapple, dice into small bite-sized pieces. If using canned pineapple, drain the liquid well and dice the fruit.
In a small bowl, marinate the pineapple in rum for about 10-15 minutes for added flavor (optional step). If skipping rum, proceed with the recipe without marinating.
Prepare the Batter:
In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
In a separate bowl, whisk the egg, milk, and vanilla extract. Gradually add the wet mixture to the dry ingredients, stirring until smooth.
Gently fold in the marinated (or plain) pineapple pieces.
Heat the Oil:
In a deep skillet or fryer, heat about 2 inches of oil to 350°F (175°C). Use a candy thermometer to monitor the temperature if needed.
Fry the Fritters:
Once the oil is hot, carefully drop spoonfuls of the batter into the oil, ensuring not to overcrowd the pan. Fry in batches if necessary.
Fry the fritters for about 2-3 minutes on each side, or until golden brown and crisp.
Remove with a slotted spoon and place on a plate lined with paper towels to drain excess oil.
Serve:
While still warm, dust the fritters generously with powdered sugar.
For an extra touch, drizzle with a bit of honey or serve with a dipping sauce, like rum-infused caramel.
