Pineapple Coconut “God Bless America” Cake
A moist, tropical delight bursting with pineapple sweetness and coconut flavor—perfect for picnics, potlucks, or patriotic celebrations!
Ingredients:
1 can (20 oz) crushed pineapple (with juice)
2 large eggs
¼ cup vegetable oil (or coconut oil for extra flavor)
1 cup granulated sugar
½ cup brown sugar (packed)
2 cups all-purpose flour
2 tsp baking soda
½ tsp salt
Optional add-ins: 1 cup shredded coconut (sweetened or unsweetened)
For Topping/Frosting Ideas:
Cream cheese frosting + toasted coconut
Whipped cream + maraschino cherries (red & blue for a patriotic twist!)
Directions:
1. Prep & Preheat
Preheat oven to 350°F (175°C).
Grease a 9×13-inch baking pan or line with parchment paper.
2. Mix Wet Ingredients
In a large bowl, whisk together pineapple (with juice), eggs, oil, granulated sugar, and brown sugar until smooth.
3. Add Dry Ingredients
Sift in flour, baking soda, and salt. Stir until just combined (don’t overmix).
Fold in shredded coconut (if using).
4. Bake
Pour batter into prepared pan. Bake for 30–35 minutes, or until a toothpick comes out clean.
5. Cool & Decorate
Let cool completely before frosting.
